Vanilla Bean Biscotti

Pure vanilla bean crunchy biscotti with drizzled dark chocolate on top – a bit crunchy to chew on!

“I feel like time is running a bit too fast” I told my husband with a black look at 6:45 on a Wednesday morning. He replied, “Maybe you’re getting old.”

Well yes, I am getting old.

But it’s true that I really have too much on my plate right now. My daily routine includes – course work +office work + a new job search (in a slow pace) + blog work + social media.

Let me tell how what I did since last Thursday.

  1. Thursday, late afternoon: The director of a product team emailed the director of my team (IT) highlighting the pain points of working with me in a project. It was a 40 items or more laundry list.
  2. Friday, early morning: Meeting with Human Resources and solving this matter with my manager, the director of IT and the woman who is complaining.
  3. Friday, evening: Job Search and some sleep (as I did not sleep the night before)
  4. Saturday and Sunday: Shooting for Demi Sweets, Cooking and more shooting.
  5. Monday Morning: Admission to Harvard University
  6. Monday Evening: Cleaning the apartment with cleaners, trying a bread recipe
  7. Tuesday: Getting familiar with the course work, office work and decided to start Whole 30 Diet, shopping at a local art store (Blick) and failing that recipe.
  8. Wednesday: Submitting of a course project, finishing this blog post and editing pictures, finalizing recipe and party idea for Matt’s Birthday, which is happening this weekend.

Hope it explains why I am missing your Facebook posts and blogposts.

On my admission to Harvard, I decided to make an easy recipe – Biscotti. This is my third biscotti recipe and nevertheless we are Biscotti lovers. No I am not perfectionist like you, who would bake a nice chocolate cake to celebrate a good news and blog about that. Seriously, don’t judge me guys – I am trying my best, okay? LOL!

Jokes apart, these vanilla bean biscottis are easy to prepare and so much flavorful. I have decided to drizzle dark chocolate over some of them but you can enjoy it naked just like my husband.

Recipe of Vanilla Bean Biscotti with Dark chocolate Drizzle

Biscotti

Yield : 4 dozen

  • 3 cups all purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, softened
  • 1 cup granulated sugar
  • 3 vanilla beans, scrapped
  • 2 eggs
  • 1/4 cup milk

1. Set the oven to 325F. In a bowl whisk flour, baking powder, salt and set aside. In a large bowl, using egg-beaters beat butter, sugar, and vanilla bean until they are pale and fluffy. Add one egg at a time and beat well. Add milk and mix.

2. Add dry ingredients in batches. Mix until combined. Remember, your dough will be very thick.

3. Transfer the dough to a work surface and quarter it.

4. Transfer each quarter to a parchment paper-lined baking sheet and form a 12″x1″ flattened log.

5. I put two logs in each sheet. Bake for 25-30 minutes until they are brown around the edges.

6. Transfer baking sheets to a  wire rack and cool for 10-15 minutes.

7. Reduce the oven temperature to 300F.

8. In a cutting board, slice the logs into 1″ thick slices with a serrated knife.

9. Return slices to the baking sheet with cut sides up and bake for 15 minutes.

10. After 15 minutes take it out, turn and bake the other side for 10-12 more minutes.

11. Transfer to a wire rack to cool completely before serving.

Chocolate Drizzle

  • 4 squares of dark chocolate or more
  • 1 tablespoon butter
  1. In a double boiler, add dark chocolate and butter. With a rubber spatula stir it until melted.
  2. Drizzle over the biscottis. Let it rest and cool it for 2 to 3 hours, or until the chocolate hardens.

Note:

1. Butter should be softened, not melted.

2. I prefer my biscotti very crunchy which is why I baked for 15 minutes on each side. If you want it a little soft, you can bake it for 10 minutes.
