Salmorejo – Spanish Cold Soup

A delicious cold tomato based creamy soup which is served during summer months in Southern Spain as a tapas.

Today I am going to talk about a Spanish cold soup – Salmorejo.  I loved Spanish cuisine so much I am going to devote an entire post on what and where to eat in South Spain. I have prepared Gazpacho before but I never heard or tasted Salmorejo before going to Spain. Salmorejo is the thick creamy version of Gazpacho and it’s quite refreshing during summer months. You won’t require fancy ingredients or kick ass technique to make Salmorejo like his big brother Gazpacho. There are two techniques:

  1. You don’t put hot water to the ingredients and just blend it.
  2. You put hot water to the ingredients to mellow the taste.

It’s really up to you how you like the taste, I have added hot water to my ingredients and mellowed the flavor or ingredients a bit. In Spain it’s served with cold cut meat and boiled eggs. I have served like that however Vegetarians please skip that and use parsley to garnish.

Recipe for Salmorejo

Serves 4

4 tomatoes, quartered

3 cloves garlic

1 yellow onion, quartered

1/4 (one day old) baguette, tore into pieces

2 cups or more boiling water

salt and black pepper to taste

1 tablespoon chopped parsley for garnish (optional)

2 boiled eggs, halved  for garnish (optional)

Chopped ham for garnish (optional)

  1. In a mixing bowl, add tomatoes, garlic, onion, baguette. Add hot water and keep it inside the water for an hour or so.
  2. After an hour strain everything reserving the liquid, squeeze the bread. In a blender, add everything with a little bit liquid at a time. Work it until it’s smooth and pureed. Add salt and black pepper accordingly. Chill it for an hour.
  3. Meanwhile boil the eggs and chop the  ham. Serve it chilled with parsley (vegetarian) or egg and ham (for non vegetarian).

    Hi Dolphia,

    I am really sorry to hear about your friend stealing your pictures and recipes. There is really no excuse for this kind of behavior and people who do these kind of things were never your “friends” in the first place. I kind of know how you feel because a few years ago the same thing happened in my family. My husband made a personalized card (spent hours on it) using pictures of stars that he had taken himself (he is an astrophysicist, so this is really special and maningful for him) and sent it to some family members on some occasion. A few months later, during new year’s he got the same card from one of his family members where this person had replaced my husband’s name with his own. When confronted, he was told that he should stop whining because those stars don’t belong to him and what is the big deal anyway. It really made my husband (and me) question a lot of things, especially about “knowing” people we think we know. I am sorry you had to go through this, but I hope that you continue your wonderful work. Good luck!

    Wow, I just could not believe it. People never understand how much work an artist put into a picture. Sad but true, sigh.

  3. I remember the burger in FPC and after how many rounds of approval did it make to the blog. Its really sad that the pic ended up in someone’s hands just to butcher it. She knows u check her blog inspite of that she had the nerve to lift it no words to say.
    Coming to the cold soup I really love that the baguette melts into the soup and no effort is needed to chew such crusty bread.
