How many of you love snow?

I do not know about you but I love snow. In India, where I was born and raised, you can only find it in the mountains. Then I moved to Buffalo, NY for three years, a place where six months of snow is common. I have seen that many of my Indian friends do not like the like wintery months here. Frankly, if you do not like it why do you stay on the East Coast? There are a lot of places on earth where it does not snow. Is it not better to live there?

When I heard about the blizzard alert for Boston that was expected to deposit 3-feet of snow I got very excited. Well, if you’ve ever lived in Buffalo this is nothing. I had to go to work unless there was 6 feet of snow outside. But Boston is very different. We got emails from our managers advising us to stay home. Snow clearing in Boston is not that great so it’s better to stay home and take some pictures 🙂

On a snowy day when my husband and I were stuck at home I decided to make these paneer cheese patties for us. I occasionally buy paneer from the store but when I am making patties or stir-fry I prefer to make my own. Believe me, it’s not as hard as it sounds! If you do not have an oven, you can fry them in a non-stick pan over medium-low heat with the same amount of oil. You can serve them with green chutney and salad, or you can make it into a burger. I prefer to stay away from carbs, so I eat it with salad.

So what are you thinking? Start preparing and enjoy this on a snowy, cold afternoon with a hot cup of coffee or tea.

Recipe for Paneer Cheese Patties

1. Pre-heat the oven to 400F.

2. In a non-stick pan over medium heat, heat oil. Add onion slices and fry for 4-5 minutes until they are translucent. Add red/green pepper and fry for an additional 2-3 minutes. Set it aside in a large bowl.

3. Add paneer, boiled potato, green chiles, salt and black pepper to the same bowl. Mash everything very well.

5. Take a handful of the mixture and shape into 3/4 inch patties. Continue doing this until you finish the fish mixture. You should be able to make 8 to 10 patties.

6.  Spray a non-stick baking sheet with cooking spray. Line them on the sheet and bake for 30-35 minutes until they are golden brown..

Serve hot with coriander mint chutney.
