Key lime pie martini: Dessert and cocktail together in a glass – have a nice and happy Friday fellas!

Lately I have been crazy busy with my blog, deskwork, Harvard assignments & projects, I felt exhausted, tired and having no time for anything. So after speaking with my dad, I calculated how much time I get in a week. It was an easy math 16*7 = 112 hours.

NOW I CAN’T INCREASE IT OR DECREASE IT, I HAVE 112 HOURS.

So I started writing down my tasks. My desk job and Harvard classes take about 50 hours a week, blog work takes close to 40 hours a week and after that I am left with 22 hours in a week.

Now I had to write down what do I do other than these 3 major tasks.

  1. Cleaning and dusting with my cleaners- around 2 hours a week.
  2. Weekday cooking – Roughly 2 hours
  3. Groceries – 2 hours

In this way, I found out that I really have 15 hours, which is close to 2 hours a day when I can relax, read a book or watch TV. Why I have not counted social media in this? Because social media is part of my blogging work and I spend a significant amount of time everyday in social media.

You see we often complain about having no time in our life. But all we need to do is get a pencil and paper and write down our task lists and assign time to it. In addition to that it’s bad idea to check facebook while cooking or having lunch or watching TV while compiling a blog post. DO NOT MULTITASK, I am telling you guys, it really helps.

There is also another thing I have been started doing – using Evernote more. I get ideas for blogpost, new recipes almost anywhere and everywhere. As evernote can be installed and synced across all devices, I am using it more. If I find an innovative recipe (from you, or from a facebook group, or from a magazine) – I am writing down in my evernote. It’s helping me when I am planning for my blogpost to go over that. I have also created a Editorial Calendar there where I am writing which week I have posted what.

Anyhow, time management is important. It does not matter whethere you’re a stay-home mom or a managing director of a startup. We all have fixed hours in our life. So prioritize, use it and make the best out of every second. Life is short, my friend!

Now, let talk about this easy key lime pie martini and how did it happen?
I wanted to make vegan champurrado and did all the shopping for it but it’s getting warm so rather than making a hot beverage in a nice spring Friday I decided to make these key lime pie martini. The best part of this cocktail is: despite being a dessert it’s low in calories. I have used graham cracker to make the rim of the martini glasses and used coconut cream for the cocktail.

Bonus Recipe {Mint Ice Cubes}: If you got some mint at home, chop them well in a food processor with some water. In a ice cube trays, add a bit of chopped mint into water and freeze them. It’s a great summer refreshment and you’ll thank yourself later for doing this.

Recipe for Key Lime Pie Martini

Serves 4

Sourness of the key lime can vary, so check the sourness by adding little by little key lime juice. If you can’t find coconut cream, use 1/4 cup more coconut milk. Use pure vanilla bean if you have at home.

1 graham cracker

1/3 cup key lime juice*

2 cups pineapple, cubed

1/2 cup pineapple juice

1 cup coconut milk

2 tablespoons sugar

1 tablespoon honey

2 tablespoons vanilla extract*

1 tablespoon coconut cream, optional *

4-5 ice cubes

4 shots of vanilla vodka

  1. In a food processor, add graham craacker. Pulse it a couple of times, until it’s finely grounded.
  2. Squeeze the limes to make lime juice. In a blender, add lime juice, pineapple chunks, coconut milk, sugar, honey, vanilla extract and coconut cream. Work it until smooth. Take it aside. {You can prepare ahead and chill them.}
  3. Rub the rim of martini glasses with lime. Dip them into graham cracker.
  4. In a martini shaker, add ice cubes, vanilla vodka and the key lime juice. Shake it vigorously. After that, pour them into martini glasses. Serve immediately.
