No churn vanilla and strawberry icecream

A couple of weeks ago I noticed that I am over-stressed. I work full-time as a senior web developer in a busy news organization. After coming back from work I barely have any time to pursue a hobby. My entire weekend is spent cooking, shooting photos and blogging. My weekends are busier and more hectic than weekdays. I barely get any time for myself.

I had a long chat with my husband and he asked if I want to pursue blogging full time. I replied, “No, I can never stop coding.” He said, “Then keep it as a hobby.  Why are you stressing yourself?” I realized that my hobby is becoming my full-time job. So I have decided to blog only one recipe a week until summer ends. If I can, I will blog two but usually it will be one.

My today’s post is Ice cream.

Ice-cream brings out the inner child in everyone. Whenever I see ice-cream I forget my diet and dive right in. No matter how many flavors I try, my all time favorite is vanilla and second is strawberry.

Usually, we buy a lot of kitchen gadgets. I have five types of blenders, a slow cooker, a stand mixer,  a mandolin slicer, pie weights and many other gadgets I can’t even name. At first I thought about getting an ice-cream maker. Then my husband asked his routine question: where are we going to keep it?  So I decided to let my dream of owning an ice-cream maker to go. Our condo is only 850 square feet, and more than half of it is already filled with my photography props and cooking gadgets. So adding another gadget did not seem like a wise idea.

When I was growing up, buying ice-cream was not very common in our home. Oh, do not get me wrong–we lived in the heart of a city. One time we visited Rajasthan. It is situated in the wester part of our country and scorchingly hot. I ate three servings of ice-cream a day to beat the heat. Needless to say, when I got back I was 10 pounds heavier. My mom got worried when she saw me gain weight so quickly so she banned ice-cream from the home. Only during Durga Puja and my birthday was I allowed to eat it.

Until I was 14, my mom made strawberry and vanilla ice cream every year for my birthday. It was very hard for me to resist the temptation to open the freezer while the ice-cream was getting frozen. Those frozen treats used to be the best birthday gift. From morning my mom would prepare ‘biryani’, shrimp ‘malaikari’, rice, dal and what not! After finishing all of the cooking she would start preparing the ice cream. I used to wait eagerly for the evening to come so I could dive right in.  Nothing beat those sweet golden childhood memories. I am turning 30 soon and we are going Italy to celebrate my 30th birthday. I will enjoy Italian food with my husband, but I will still miss my mom’s strawberry and vanilla ice cream.

1. I highly recommend using vanilla beans. If you can not find it you can substitute it with vanilla extract.

2. I used an electric egg beater to whisk the cream.

Instructions

Vanilla Icecream:

1. If you’re using vanilla bean (which I highly recommend), cut the pod in half with a paring knife. Scrape out the seeds using the dull side of the blade.

2. In a mixing bowl, add heavy cream and sweetened condensed milk. Using an electric beater, whip for 8 to 10 minutes, or until stiff peaks form.

3. Add vanilla seeds or essence and whip for another 5 to 6 minutes.

4. Once combined, transfer it to a parchment-lined freezer-safe container and cover loosely with plastic wrap. Wrap with aluminum foil to freeze. Chill it for 6 hours to overnight.

Strawberry Icecream:

1. In a food processor, add strawberries. Work it until it forms a puree. Set it aside.

1. In a mixing bowl, add heavy cream and sweet condensed milk.Using an electric beater, whip for 8 to 10 minutes, or until stiff peaks form.

2. Add strawberry puree and whisk for another 5 to 6 minutes.

4. Once combined, transfer it to a parchment-lined freezer-safe container and cover loosely with plastic wrap. Wrap with aluminium foil to freeze. Chill it for 6 hours to overnight.
